Our guest coffee this month is roasted by the our friends at Valor Coffee near Atlanta, Georgia.

"Imagine lying in a field of wildflowers watching a pink and orange sky fade beyond the horizon. Now put that in a cup and you have Andres Cardona's Sunset. Andres is a coffee producer from Santa Barbara, Colombia, and one we always look forward to featuring on our menu. A true family man who dotes on his wife and daughter, he also happens to be a master of fermentation and coffee, having spent the last eight years honing his craft in specialty coffee. For Sunset, depulped cherries ferment in sealed tanks along with mosto, juice from coffee cherries. The result is a juicy, layered cup with cherry sweetness and floral complexity."

This full-bodied, syrupy-sweet coffee soaks up all the delicious flavors of the region. Sun-ripened coffee cherries were left on the branch until they were bursting with concentrated sugars. Once adequately dried, the cherries were mechanically harvested, sorted, and set out on patios to absorb as much sugar and flavor from the fruit as possible

This lot of green comes to us from TYPICA , an importer sourcing from Coopama. Coopama is a farmer-owned cooperative located in the Sul de Minas region of Brazil, established to build long-term sourcing relationships that pursue both consistency and discovery. Founded in 1944 and headquartered in Machado, Minas Gerais, the cooperative brings together 3,600 member farmers, 60% of whom are small-scale family producers. What sets Coopama apart from typical Brazilian volume suppliers is its commitment to full lot traceability. While it is standard practice for most cooperatives to blend lots after classification, Coopama manages every lot individually, tracking unique lot numbers and bag counts down to the SACA level

Valor's Sunset Colombia storms the scene with its bright and sweet flavor profile. Following behind is our Honey Moon's China. See if you notice it bringing more flavor, depth, or even simple mouth-feel (literally, the feeling in your mouth) to the cup.

The roles flipped, China takes the lead. Try to notice the sweet Colombia poking it's way through, complementing the rich, chocolatey mouthfeel of the China.
