Our guest coffee this month is roasted by the our friends at Valor Coffee near Atlanta, Georgia.
"Imagine lying in a field of wildflowers watching a pink and orange sky fade beyond the horizon. Now put that in a cup and you have Andres Cardona's Sunset. Andres is a coffee producer from Santa Barbara, Colombia, and one we always look forward to featuring on our menu. A true family man who dotes on his wife and daughter, he also happens to be a master of fermentation and coffee, having spent the last eight years honing his craft in specialty coffee. For Sunset, depulped cherries ferment in sealed tanks along with mosto, juice from coffee cherries. The result is a juicy, layered cup with cherry sweetness and floral complexity."

HONEY MOON COFFEE

Process: Natural Double Anaerobic
Roast: Light
Notes: Chocolate Liqeuer · Dragonfruit · Pomegranate
Black sheep is an experimental coffee that features a 30-day anaerobic fermentation, an initial drying period to 35% moisture, an additional sealed 20-day fermentation and a final drying to 10-12% moisture.
This lot of green comes to us from torch coffee. Their pu'er facility in yunnan houses everything: farms, processing mills, a roastery, training lab, specialty cafe, & export operations. Their mountain man project has trained over 400 farmers since 2017, & the team conducts hundreds of fermentation experiments each year.

Valor's Sunset Colombia storms the scene with its bright and sweet flavor profile. Following behind is our Honey Moon's China. See if you notice it bringing more flavor, depth, or even simple mouth-feel (literally, the feeling in your mouth) to the cup.

The roles flipped, China takes the lead. Try to notice the sweet Colombia poking it's way through, complementing the rich, chocolatey mouthfeel of the China.
Savor those sips. Try to catch the subtle and not-so-subtle flavors of the two coffees interacting in a new way.
